Ingredients

  • 4 large potatoes
  • 4 sprigs of fresh thyme
  • Salt to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel the potatoes and cut them into quarters. Place them in a large pot of salted water and bring to a boil. Cook for about 8-10 minutes, or until the potatoes are just tender.
  3. Drain the potatoes and return them to the pot. Shake the pot vigorously to roughen up the edges of the potatoes.
  4. Place the potatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt and the leaves from the thyme sprigs.
  5. Roast the potatoes in the preheated oven for about 30-40 minutes, or until they are golden brown and crispy. Flip them halfway through cooking to ensure even browning.
  6. Remove the potatoes from the oven and let them cool slightly before serving. Sprinkle with a little more salt, if desired.
