Roasted Artichoke Delight

  • 4 large artichokes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup strong brewed tea


  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Rinse the artichokes under cold water, then pat them dry with a paper towel.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, and thyme.
  4. Place the artichokes on the prepared baking sheet and brush the tops with the olive oil mixture.
  5. Sprinkle salt and pepper to taste.
  6. Roast the artichokes in the preheated oven for 30-35 minutes, or until the leaves are tender and slightly caramelized.
  7. While the artichokes are roasting, brew a cup of strong tea and set it aside.
  8. Once the artichokes are done, remove them from the oven and let them cool for 5-7 minutes.
  9. Serve the artichokes warm, with a steaming cup of tea on the side.
