Roasted Beet and Green Bean Salad

Ingredients

  • 4 medium beets, peeled and diced
  • 1 pound green beans, trimmed
  • 1 teaspoon baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced beets with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until tender.
  3. While the beets are roasting, toss the green beans with a little olive oil, salt, and pepper. Spread them out on a separate baking sheet and roast for 15-20 minutes, or until they are slightly charred and tender.
  4. In a small bowl, mix the baking powder with a little water to form a paste. Toss the roasted green beans in the paste until they are evenly coated, then return them to the oven for 5 minutes to crisp up.
  5. Once the beets and green beans are cooked, let them cool slightly before combining them in a large bowl.
  6. Drizzle the salad with your favorite vinaigrette or a simple mix of olive oil and balsamic vinegar.
  7. Toss to combine and serve at room temperature.
