This roasted beet and green bean salad is a delicious and vibrant dish that’s perfect for a quick and healthy vegetarian meal. The combination of earthy beets and crispy green beans is sure to be a hit with your guests!

Ingredients

  • 4 medium beets, peeled and diced
  • 1 pound green beans, trimmed
  • 1 teaspoon baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced beets with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until tender.

  6. Drizzle the salad with your favorite vinaigrette or a simple mix of olive oil and balsamic vinegar.
  7. Toss to combine and serve at room temperature.
