  • 4 chicken breasts
  • 6 medium potatoes
  • 3 tbsp olive oil
  • 1 tbsp dried rosemary
  • 1 tbsp garlic powder
  • Salt and pepper to taste

  1. Preheat oven to 400°F (200°C).
  2. Cut the potatoes into small bite-sized pieces and spread them out on a baking sheet. Drizzle the olive oil over them and sprinkle with the rosemary, garlic powder, salt, and pepper. Toss well to coat evenly.
  3. Roast the potatoes in the oven for 25-30 minutes, until crispy and golden brown.
  4. While the potatoes are roasting, season the chicken breasts with salt and pepper.
  5. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, until golden brown and cooked through.
  6. Once they are cooked, transfer the chicken breasts to a baking dish and bake in the oven for an additional 10-12 minutes, until juices run clear and the chicken is fully cooked.
  7. Remove the chicken breasts and potatoes from the oven, and serve hot. Enjoy your delicious roasted chicken with crispy potatoes!
