Roasted Corn Salad Recipe

This roasted corn salad is an easy and delicious summer side dish that is perfect for a BBQ or picnic.


  • 4 ears of fresh corn on the cob
  • 1 red pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup of fresh cilantro, chopped
  • 1/4 cup of olive oil
  • 2 tbsp of fresh lime juice
  • Salt and pepper to taste


  1. Preheat your oven to 425°F (220°C).
  2. Shuck and clean the corn on the cob and place it on a baking sheet.
  3. Roast the corn in the oven for about 20 minutes, or until lightly charred.
  4. Remove the corn from the oven and let it cool for a few minutes.
  5. Once cooled, cut the corn kernels off the cob and place them in a large mixing bowl.
  6. Add the diced red pepper, red onion, and chopped cilantro to the bowl with the corn.
  7. In a separate small bowl, whisk together the olive oil and lime juice until well combined.
  8. Pour the olive oil and lime mixture over the corn salad and toss to coat.
  9. Season with salt and pepper to taste.
  10. Serve and enjoy!
