Roasted Corn Salad Recipe

This roasted corn salad is an easy and delicious summer side dish that is perfect for a BBQ or picnic.
Ingredients
- 4 ears of fresh corn on the cob
- 1 red pepper, diced
- 1/2 red onion, diced
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of olive oil
- 2 tbsp of fresh lime juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Shuck and clean the corn on the cob and place it on a baking sheet.
- Roast the corn in the oven for about 20 minutes, or until lightly charred.
- Remove the corn from the oven and let it cool for a few minutes.
- Once cooled, cut the corn kernels off the cob and place them in a large mixing bowl.
- Add the diced red pepper, red onion, and chopped cilantro to the bowl with the corn.
- In a separate small bowl, whisk together the olive oil and lime juice until well combined.
- Pour the olive oil and lime mixture over the corn salad and toss to coat.
- Season with salt and pepper to taste.
- Serve and enjoy!
