Roasted Garlic Chicken with Potato and Onion Bread

This hearty and comforting dish combines the savory flavors of roasted chicken with garlic, potatoes, and onion bread for a satisfying meal for four.

Ingredients

  • 4 chicken breasts
  • 4 large potatoes, diced
  • 8 cloves of garlic, minced
  • 1 onion, thinly sliced
  • 4 slices of bread
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts in a baking dish and season with salt, pepper, and half of the minced garlic.
  3. In a separate bowl, toss the diced potatoes with the remaining minced garlic, salt, and pepper. Spread the potatoes around the chicken in the baking dish.
  4. Drizzle olive oil over the chicken and potatoes, then cover the dish with foil and bake for 30 minutes.
  5. After 30 minutes, remove the foil and add the sliced onion to the baking dish. Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and the potatoes are golden brown.
  6. While the chicken and potatoes are roasting, brush the slices of bread with olive oil and toast them in a pan until golden brown.
  7. Serve the roasted garlic chicken and potatoes with the onion bread on the side.
