Roasted Garlic Chicken with Potato and Onion Bread

This hearty and comforting dish combines the savory flavors of roasted chicken with garlic, potatoes, and onion bread for a satisfying meal for four.
Ingredients
- 4 chicken breasts
- 4 large potatoes, diced
- 8 cloves of garlic, minced
- 1 onion, thinly sliced
- 4 slices of bread
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Place the chicken breasts in a baking dish and season with salt, pepper, and half of the minced garlic.
- In a separate bowl, toss the diced potatoes with the remaining minced garlic, salt, and pepper. Spread the potatoes around the chicken in the baking dish.
- Drizzle olive oil over the chicken and potatoes, then cover the dish with foil and bake for 30 minutes.
- After 30 minutes, remove the foil and add the sliced onion to the baking dish. Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and the potatoes are golden brown.
- While the chicken and potatoes are roasting, brush the slices of bread with olive oil and toast them in a pan until golden brown.
- Serve the roasted garlic chicken and potatoes with the onion bread on the side.
