A Hearty Comfort Recipe for a Cozy Night In


  • 1.5 kg pork roast
  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • Salt and pepper to taste


  1. Preheat the oven to 220°C (425°F).
  2. In a large bowl, toss the sweet potato cubes with 1 tbsp of olive oil, salt, and pepper until they are evenly coated.
  3. Spread the sweet potatoes out in a single layer on a baking sheet and roast for 20-25 minutes, or until they are tender and golden brown.
  4. Meanwhile, place the pork roast in a large roasting tray and drizzle with the remaining 1 tbsp of olive oil.
  5. Season the pork with salt and pepper to taste.
  6. Roast the pork in the preheated oven for 25-30 minutes per kilogram, or until it reaches an internal temperature of 65°C (149°F).
  7. Remove the pork from the oven and let it rest for 10-15 minutes before slicing.
  8. Serve the sliced pork with the roasted sweet potatoes and enjoy!
