Roasted Squash and Okra with Nut Crunch

This recipe is a delightful vegan dish that brings together the natural sweetness of squash and the earthy flavor of okra. The addition of crunchy nuts elevates this dish to a whole new level, creating a comforting and satisfying meal for four.
Ingredients
- 1 medium squash
- 1 cup okra
- 1/2 cup almonds
- 1/2 cup walnuts
- Cooking spray (for air fryer)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Cut the squash into wedges, removing the seeds, and place them in a bowl.
- Trim the okra and add it to the bowl with the squash.
- Lightly spray the squash and okra with cooking spray and toss to coat evenly.
- Place the squash and okra in the air fryer basket in a single layer.
- Air fry for 15-20 minutes, or until the squash is tender and the okra is crisp-tender, shaking the basket halfway through.
- While the squash and okra are cooking, roughly chop the almonds and walnuts.
- In a small pan, toast the chopped nuts over medium heat until fragrant, about 3-5 minutes, stirring frequently.
- Once the squash and okra are done, transfer them to a serving dish and sprinkle the toasted nuts on top.
- Serve the roasted squash and okra with nut crunch immediately and enjoy!
