Root Beer Braised Pork Shoulder with Potatoes and Green Beans

Ingredients
- 3 lbs pork shoulder
- 12 oz root beer
- 4 large potatoes, peeled and chopped into chunks
- 1 lb fresh green beans
- Salt and pepper
- Olive oil
Instructions
- Preheat your oven to 350°F.
- Season the pork shoulder generously with salt and pepper on all sides.
- Heat a large cast-iron skillet over medium-high heat and drizzle with olive oil.
- Once the skillet is hot, sear the pork shoulder on all sides until browned.
- Remove the pork shoulder from the skillet and set aside.
- Add the chopped potatoes to the same skillet and cook until lightly browned, about 5 minutes.
- Pour the root beer over the potatoes and stir to combine.
- Add the pork shoulder back to the skillet, making sure to nestle it amongst the potatoes.
- Cover the skillet with a lid (or aluminum foil) and transfer to the oven.
- Roast for 2.5-3 hours, or until the pork shoulder is fork-tender and the potatoes are fully cooked.
- In the meantime, trim the ends off of the green beans and steam them until tender.
- Once the pork shoulder is done, remove from the oven and let rest for at least 10 minutes.
- Serve the pork shoulder with the roasted potatoes and steamed green beans on the side.
