Root Beer Braised Pork Shoulder with Potatoes and Green Beans

Ingredients

  • 3 lbs pork shoulder
  • 12 oz root beer
  • 4 large potatoes, peeled and chopped into chunks
  • 1 lb fresh green beans
  • Salt and pepper
  • Olive oil

Instructions

  1. Preheat your oven to 350°F.
  2. Season the pork shoulder generously with salt and pepper on all sides.
  3. Heat a large cast-iron skillet over medium-high heat and drizzle with olive oil.
  4. Once the skillet is hot, sear the pork shoulder on all sides until browned.
  5. Remove the pork shoulder from the skillet and set aside.
  6. Add the chopped potatoes to the same skillet and cook until lightly browned, about 5 minutes.
  7. Pour the root beer over the potatoes and stir to combine.
  8. Add the pork shoulder back to the skillet, making sure to nestle it amongst the potatoes.
  9. Cover the skillet with a lid (or aluminum foil) and transfer to the oven.
  10. Roast for 2.5-3 hours, or until the pork shoulder is fork-tender and the potatoes are fully cooked.
  11. In the meantime, trim the ends off of the green beans and steam them until tender.
  12. Once the pork shoulder is done, remove from the oven and let rest for at least 10 minutes.
  13. Serve the pork shoulder with the roasted potatoes and steamed green beans on the side.
