This recipe is perfect for bringing comfort on a chilly evening. The combination of root beer and chicken makes for a flavorful, juicy main dish, while the roasted potatoes add a crispy and satisfying crunch.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bottle of root beer (12 ounces)
  • 4 medium-sized potatoes, cubed
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Preheat the oven to 425°F.
  2. In a large bowl, combine the chicken and root beer. Let the chicken marinate in the root beer for at least 30 minutes.
  3. In a separate bowl, mix together the cubed potatoes, salt, pepper, and olive oil.
  4. Place the chicken breasts in a baking dish and pour some of the root beer marinade over them.
  5. Arrange the seasoned potatoes around the chicken, making sure they are spread out in a single layer.
  6. Bake the chicken and potatoes in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are crispy and golden brown.
  7. Serve the chicken and potatoes together, spooning some of the root beer marinade over the chicken for added flavor. Enjoy!
