Root Beer Chicken and Potatoes

Ingredients
- 4 boneless, skinless chicken breasts
- 1 bottle of root beer (12 ounces)
- 4 medium-sized potatoes, cubed
- Salt
- Pepper
- Olive oil
Instructions
- Preheat the oven to 425°F.
- In a large bowl, combine the chicken and root beer. Let the chicken marinate in the root beer for at least 30 minutes.
- In a separate bowl, mix together the cubed potatoes, salt, pepper, and olive oil.
- Place the chicken breasts in a baking dish and pour some of the root beer marinade over them.
- Arrange the seasoned potatoes around the chicken, making sure they are spread out in a single layer.
- Bake the chicken and potatoes in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are crispy and golden brown.
