Rustic Italian Canned Fish and Artichoke Pasta

A simple and flavorful dish that celebrates seasonal ingredients


  • 2 cans of tuna or sardines
  • 4 fresh artichokes
  • Baking soda
  • Olive oil
  • Salt and pepper
  • 400g of pasta of your choice
  • Fresh parsley (for garnish)


  1. Prepare the Artichokes: Fill a large bowl with water and add a squeeze of lemon juice. Trim the artichokes, removing tough outer leaves and cutting off the top third. Place them in the lemon water to prevent browning. In a pot, bring water to a boil and add a pinch of baking soda. Boil the artichokes until tender, about 15-20 minutes. Drain and set aside.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Prepare the Fish: In a frying pan, heat a drizzle of olive oil over medium heat. Add the canned fish and cook for 2-3 minutes, breaking it up with a wooden spoon. Season with salt and pepper.
  4. Combine Everything: Add the cooked pasta to the pan with the fish. Toss to combine. Cut the cooked artichokes into quarters and add them to the pan. Gently toss to mix everything together.
  5. Serve and Garnish: Divide the pasta and fish mixture among 4 serving plates. Drizzle with a bit more olive oil and sprinkle with freshly chopped parsley.
