Sausage and Chicken Jambalaya

This classic jambalaya recipe is a delicious and hearty dish that combines flavorful sausage, tender chicken, and rice. It’s a perfect meal to feed a group of four.

Ingredients

  • 1 lb chicken, diced
  • 1 cup rice
  • 8 oz sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • 1/2 tsp thyme
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot or Dutch oven, brown the sausage over medium heat. Remove and set aside.
  2. In the same pot, add the diced chicken and cook until browned. Remove and set aside with the sausage.
  3. Add the onion, bell pepper, and garlic to the pot and sauté until softened.
  4. Stir in the rice, diced tomatoes, chicken broth, paprika, thyme, and cayenne pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and most of the liquid is absorbed.
  6. Stir in the cooked sausage and chicken, and continue to cook for an additional 5 minutes to heat through.
  7. Season with salt and pepper to taste.
  8. Serve the jambalaya hot, garnished with chopped green onions.
