Sausage and Chicken Jambalaya

This classic jambalaya recipe is a delicious and hearty dish that combines flavorful sausage, tender chicken, and rice. It’s a perfect meal to feed a group of four.
Ingredients
- 1 lb chicken, diced
- 1 cup rice
- 8 oz sausage, sliced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 tsp paprika
- 1/2 tsp thyme
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot or Dutch oven, brown the sausage over medium heat. Remove and set aside.
- In the same pot, add the diced chicken and cook until browned. Remove and set aside with the sausage.
- Add the onion, bell pepper, and garlic to the pot and sauté until softened.
- Stir in the rice, diced tomatoes, chicken broth, paprika, thyme, and cayenne pepper. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and most of the liquid is absorbed.
- Stir in the cooked sausage and chicken, and continue to cook for an additional 5 minutes to heat through.
- Season with salt and pepper to taste.
- Serve the jambalaya hot, garnished with chopped green onions.
