Savory Ham and Eggplant Casserole with Potato-Corn Crust

Ingredients
- 1 packet of yeast
- 1 egg
- 1 sheet of nori, finely chopped
- 2 large potatoes, peeled and thinly sliced
- 1 cup of diced ham
- 1 medium eggplant, diced
- 1 cup of milk
- 1 cup of corn kernels (fresh, canned, or frozen)
- Salt and pepper to taste
- 2 tablespoons of butter, melted
- 1 tablespoon of olive oil
Instructions
- In a small bowl, dissolve the yeast in 1/4 cup of warm water. Let it sit for about 5 minutes until it becomes frothy.
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced eggplant and cook until soft and slightly browned, about 5-7 minutes. Season with salt and pepper. Set aside.
- In a mixing bowl, combine the sliced potatoes, corn kernels, and melted butter. Season with salt and pepper. Mix well to ensure the potatoes and corn are evenly coated.
