Savory Ham and Eggplant Potato Casserole with Nori

Ingredients
- 2 teaspoons active dry yeast
- 1 large egg (plus 1 more for the egg wash)
- 1 medium eggplant, diced
- 4 medium potatoes, peeled and diced
- 200g ham, diced
- 1 cup milk
- 1 cup corn kernels (fresh or frozen)
- 2 sheets nori, finely chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup shredded cheese (optional, for topping)
Instructions
- Prepare the Yeast Mixture: In a small bowl, dissolve the yeast in 1/4 cup of warm water. Let it sit for about 5 minutes until it becomes frothy.
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook the Potatoes and Eggplant: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10 minutes, until they are just tender. Drain and set aside. In a large pan, heat the olive oil over medium heat. Add the diced eggplant and cook until it softens and begins to brown, about 5-7 minutes. Remove from heat.
- Combine Ingredients: In a large mixing bowl, combine the cooked potatoes, eggplant, ham, corn, and nori. Season with salt and pepper to taste.
