Ingredients
- 2 cups of rice
- 1 large apple, diced (preferably a sweet variety like Fuji or Honeycrisp)
- 400g of meat (your choice: chicken, beef, or pork), diced
- 2 medium potatoes, peeled and diced
- 4 fish cakes, sliced
- 4 cups of chicken or vegetable broth (for cooking the rice)
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of paprika (optional)
- Fresh herbs for garnish (like parsley or chives)
Instructions
- Prepare the Rice: Rinse the rice under cold water until the water runs clear. In a pot, bring the chicken or vegetable broth to a boil and add the rice. Cover and reduce heat to low, cooking for about 15-20 minutes until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
- Cook the Potatoes: In a separate pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-15 minutes. Drain and set aside.
- Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the diced meat, season with salt, pepper, and paprika (if using), and cook until browned and cooked through, about 7-10 minutes. Remove from the skillet and set aside.
- Sauté the Apples: In the same skillet, add the diced apples and cook for 3-4 minutes until they start to soften. Add the cooked potatoes and meat back into the skillet, mixing everything together.
- Add the Fish Cakes: Gently fold in the sliced fish cakes, cooking for an additional 2-3 minutes until heated through.
- Combine and Serve: Serve the meat and apple mixture over the fluffy rice. Garnish with fresh herbs for a pop of color and flavor.
This Savory Rice Medley is not only a feast for the eyes but also a delightful blend of textures and flavors that will satisfy any palate. Enjoy this dish as a comforting family meal or as a special treat for guests. Happy cooking!
