Savory Sausage and Bok Choy Egg Rolls

Ingredients
- 1 cup bok choy, chopped
- 1 medium carrot, grated
- 1/2 small onion, finely chopped
- 1 sausage link (your choice, pork or chicken), casings removed
- 2 egg roll wrappers
- Oil for frying (vegetable or canola)
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, add the sausage and cook until browned, breaking it up into small pieces.
- Add the chopped onion and cook until translucent, about 3 minutes.
- Stir in the grated carrot and bok choy; cook for an additional 2-3 minutes until the bok choy is wilted. Season with salt and pepper to taste.
- Lay an egg roll wrapper on a flat surface with a corner pointing towards you.
- Spoon about 2-3 tablespoons of the filling onto the wrapper, just above the center.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly towards the top corner. Seal the edge with a little water.
- Heat oil in a deep skillet or frying pan over medium-high heat.
- Once the oil is hot, carefully place the egg rolls seam-side down in the oil.
- Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
- Enjoy your egg rolls hot, with dipping sauce of your choice, such as soy sauce or sweet chili sauce.
