Seitan & Zucchini Italian Delight

A bloody brilliant dish that packs a punch with flavors! We’re using seitan for a hearty base and combining it with fresh zucchini and beans for a nutritious, satisfying meal. Perfect for four people, and don't you dare mess it up!
Ingredients
- Seitan (400g)
- Zucchini (2 medium-sized)
- Canned beans (400g, any variety you fancy)
- Olive oil (2 tablespoons)
- Fresh basil (a handful, chopped)
- Garlic (3 cloves, minced)
- Salt (to taste)
- Black pepper (to taste)
- Red chili flakes (optional, if you like it spicy!)
Instructions
- Prep the Ingredients: First, chop the zucchini into bite-sized pieces. Don’t make them too small, or they’ll turn to mush! We want some texture here, alright?
- Process the Seitan: Toss the seitan into a bloody food processor and pulse it until finely chopped. It should resemble a mince. If it’s a chunky mess, you’re doing it wrong!
- Sauté the Garlic: In a large frying pan, heat the olive oil over medium heat. Add the minced garlic and sauté until it’s golden. Don’t let it burn; keep an eye on it, for crying out loud!
- Cook the Zucchini: Toss in the zucchini and cook for about 5 minutes, stirring occasionally. We want it tender, not mushy. Season with salt and pepper as you go.
- Add the Seitan: Now, add that processed seitan to the pan and mix it well with the zucchini. Cook for another 5-7 minutes. It should be sizzling beautifully!
- Mix in the Beans: Drain and rinse the beans, then throw them into the pan. Stir everything together like you mean it! Let it cook for another 3-4 minutes until everything is heated through.
- Finish with Basil: Remove the pan from the heat and fold in the fresh basil. Give it a taste! Adjust the seasoning if it needs a little more oomph.
- Serve Hot: Dish it out onto plates and sprinkle with red chili flakes if you fancy a bit of heat.
