Short Ribs with Tomato and Garlic

  • 1 pound beef short ribs
  • 2 large tomatoes, diced
  • 3 cloves of garlic, minced
  • 1 skillet


  1. Preheat the oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. Heat the skillet over medium-high heat and sear the short ribs until browned on both sides. Remove from heat and set aside.
  4. In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.
  5. Add the diced tomatoes to the skillet and cook for 5-7 minutes until they start to break down.
  6. Add the browned short ribs back into the skillet, making sure they are covered with the tomato mixture.
  7. Transfer the skillet to the preheated oven and braise for 2-3 hours until the short ribs are tender.
  8. Serve hot, garnished with fresh parsley or basil.
