Ingredients
- 2 cups of shredded chicken (cooked)
- 1 large leek, finely sliced
- 2 tablespoons of peanut butter (preferably natural, without added sugar)
- 1 1/2 cups of rice (jasmine or basmati works well)
- 3 cups of chicken broth (or water)
- 2 tablespoons of soy sauce (low sodium)
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1 lime (juice and zest)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Drizzle the olive oil into the rice cooker.
