Shrimp and Rice

While the rice is cooking, heat the olive oil in a skillet over medium-high heat.

Ingredients

  • 1 pound of shrimp
  • 2 cups of rice
  • Salt to taste
  • Pepper to taste
  • 2 cloves of garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tablespoon of olive oil
  • 2 tablespoons of soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of red pepper flakes (optional)

Instructions

  1. Prepare the shrimp by cleaning and deveining them.
  2. In a large saucepan, cook the rice according to the package instructions.
  3. While the rice is cooking, heat the olive oil in a skillet over medium-high heat.
  4. Add the minced garlic, diced onion, and diced bell peppers to the skillet, and sauté until they are tender and slightly browned.
  5. Add the cleaned shrimp to the skillet and cook until they are pink and opaque.
  6. Season the shrimp with salt, pepper, soy sauce, sesame oil, and red pepper flakes (if desired). Stir well to coat the shrimp evenly with the seasoning.
  7. Once the rice is cooked, fluff it with a fork and transfer it to a large serving dish.
  8. Pour the cooked shrimp and vegetable mixture over the rice, and gently toss to combine.
  9. Serve the shrimp and rice dish immediately, and enjoy!
