Ingredients
- 200g pasta (spaghetti or linguine)
- 250g shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1/2 cup white wine (such as Sauvignon Blanc)
- 3 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Optional: lemon wedges for serving
Instructions
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.
- Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque.
- Pour in the white wine and bring to a simmer. Allow it to cook for about 2-3 minutes to let the alcohol evaporate and the flavors meld.
- Add the cooked pasta to the skillet and toss to combine. If the mixture seems dry, gradually add some reserved pasta water until you reach your desired consistency.
- Stir in the remaining tablespoon of butter until melted and fully incorporated. Adjust seasoning with salt and pepper if needed.
- Plate the pasta and shrimp, garnishing with fresh parsley. Serve with lemon wedges on the side for an extra zing.
