Simple, Satisfying Vegan Green Bean Stew

Green bean, Cabbage, tomato paste, slow cooker
A hearty, comforting stew that's perfect for a chilly evening, and it's ready when you are!
Ingredients
- 1 pound fresh green beans, trimmed
- 1 medium head of cabbage, chopped
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 cups vegetable broth
Instructions
- Add the olive oil to the slow cooker and swirl it around to coat the bottom.
- Add the chopped cabbage and cook on high for 1 hour, or until it starts to soften.
- Add the green beans, tomato paste, salt, and pepper to the slow cooker. Stir to combine.
- Pour in the vegetable broth and stir again.
- Cook on low for 4-5 hours, or until the green beans are tender.
- Serve hot, garnished with fresh herbs if desired.
