Slow Cooked Pork Shoulder with Tomato and Onion

1 pound of Pork shoulder, tomatoes, 1 onion

This recipe yields a tender, flavorful pork shoulder that melts in your mouth. Pair it with some crusty bread or steamed veggies for a satisfying meal.

Ingredients

  • 1 pound Pork shoulder
  • 3-4 Tomatoes, diced
  • 1 Onion, chopped
  • Salt and Pepper
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano

Instructions

  1. Rub 1 pound of pork shoulder generously with salt, pepper and paprika.
  2. In a large pan or dutch oven, heat some olive oil over medium-high heat. Sear the pork on all sides until browned.
  3. Remove the pork from the pan and set it aside.
  4. In the same pan, add the chopped onion and cook until softened, about 5 minutes. Add in the garlic and cook for another minute.
  5. Add in the diced tomatoes, cumin, and oregano to the pan, stirring to combine.
  6. Add the pork back to the pan and spoon the tomato mixture over the top.
  7. Cover the pan and cook on low heat for 6-8 hours, until the pork is tender and easily shreds with a fork.
  8. Serve hot, garnished with fresh herbs or chopped green onion, if desired.
