Slow Cooked Pork Shoulder with Tomato and Onion
What Started it all:
1 pound of Pork shoulder, tomatoes, 1 onion
This recipe yields a tender, flavorful pork shoulder that melts in your mouth. Pair it with some crusty bread or steamed veggies for a satisfying meal.
Ingredients
- 1 pound Pork shoulder
- 3-4 Tomatoes, diced
- 1 Onion, chopped
- Salt and Pepper
- 2 cloves Garlic, minced
- 1/2 teaspoon Paprika
- 1 teaspoon Cumin
- 1 teaspoon Oregano
Instructions
- Rub 1 pound of pork shoulder generously with salt, pepper and paprika.
- In a large pan or dutch oven, heat some olive oil over medium-high heat. Sear the pork on all sides until browned.
- Remove the pork from the pan and set it aside.
- In the same pan, add the chopped onion and cook until softened, about 5 minutes. Add in the garlic and cook for another minute.
- Add in the diced tomatoes, cumin, and oregano to the pan, stirring to combine.
- Add the pork back to the pan and spoon the tomato mixture over the top.
- Cover the pan and cook on low heat for 6-8 hours, until the pork is tender and easily shreds with a fork.
- Serve hot, garnished with fresh herbs or chopped green onion, if desired.
