Slow Cooker Carrot Chia Seed Cake

  • 2 cups grated Carrot
  • 1 cup Chia Seeds
  • 1 teaspoon baking soda


  1. In a large bowl, mix the grated carrot, chia seeds, and baking soda together until well combined.
  2. Grease the slow cooker pot with a little oil or butter to prevent the cake from sticking.
  3. Transfer the carrot chia seed mixture into the slow cooker pot and spread it out evenly.
  4. Cover the slow cooker with the lid and cook on low for 3-4 hours, or until the cake is set in the middle.
  5. Once cooked, carefully remove the pot from the slow cooker and let the cake cool before slicing and serving.
