Slow Cooker Chuck Roast Recipe

This recipe is perfect for 4 people and is great for dinner. The slow cooker does all the hard work, making it a super easy meal to prepare.

Ingredients

  • 1 (3-4 pound) chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Preheat a large skillet over medium-high heat. Season the chuck roast with salt and pepper.
  2. Add the olive oil to the skillet and sear the chuck roast for 4-5 minutes on each side, until browned.
  3. Transfer the chuck roast to the slow cooker.
  4. Add the chopped onion and garlic to the skillet and cook for 2-3 minutes, until softened.
  5. Add the beef broth, red wine, tomato paste, Worcestershire sauce, thyme, and rosemary. Stir to combine.
  6. Pour the mixture over the chuck roast in the slow cooker.
  7. Cook on low for 8-10 hours, or until the chuck roast is tender and falls apart easily with a fork.
  8. Serve hot with your favorite side dishes, such as mashed potatoes or roasted vegetables.
