This hearty and flavorful stew brings together tender chicken, earthy turnips, and crunchy nuts in a rich Japanese-inspired broth. The slow cooker ensures that the flavors meld together perfectly, making it a delicious and convenient meal for four.

Ingredients

  • 4 chicken breasts
  • 2 turnips, diced
  • 1/2 cup mixed nuts (almonds, walnuts), chopped
  • 4 cups chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 2 tbsp sake
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green onions, sliced
  • 2 tbsp sesame seeds
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Season the chicken breasts with salt and pepper, then place them in the slow cooker.
  2. Add the diced turnips and chopped nuts on top of the chicken.
  3. In a bowl, mix together the chicken broth, soy sauce, mirin, sake, brown sugar, garlic, and ginger. Pour this mixture over the chicken and turnips in the slow cooker.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender.
  5. Once cooked, shred the chicken using two forks.
  6. Stir in the sliced green onions and sesame seeds.
  7. Serve the stew over cooked rice and enjoy!
