This hearty and flavorful stew is a perfect combination of nutritious kale, earthy turnips, and sweet dried fruits. The slow cooker method makes it easy to prepare and allows the flavors to meld together beautifully.

Ingredients

  • 1 bunch of kale, stems removed and chopped
  • 2 turnips, peeled and diced
  • 1/2 cup dried fruits (raisins, apricots, or a mix)
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Heat the olive oil in a pan over medium heat and sauté the garlic and onion until softened.
  2. Add the kale and turnips to the slow cooker.
  3. Pour in the sautéed garlic and onion, dried fruits, vegetable broth, cumin, paprika, and red pepper flakes.
  4. Season with salt and pepper to taste.
  5. Stir well to combine all the ingredients.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the vegetables are tender.
  7. Serve the stew hot, and adjust seasoning if necessary.
