Slow Cooker Kale and Turnip Stew with Dried Fruits

This hearty and flavorful stew is a perfect combination of nutritious kale, earthy turnips, and sweet dried fruits. The slow cooker method makes it easy to prepare and allows the flavors to meld together beautifully.
Ingredients
- 1 bunch of kale, stems removed and chopped
- 2 turnips, peeled and diced
- 1/2 cup dried fruits (raisins, apricots, or a mix)
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp red pepper flakes (optional)
Instructions
- Heat the olive oil in a pan over medium heat and sauté the garlic and onion until softened.
- Add the kale and turnips to the slow cooker.
- Pour in the sautéed garlic and onion, dried fruits, vegetable broth, cumin, paprika, and red pepper flakes.
- Season with salt and pepper to taste.
- Stir well to combine all the ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the vegetables are tender.
- Serve the stew hot, and adjust seasoning if necessary.
