Slow Cooker Korean Beef and Pumpkin Stir-Fry

Ingredients

  • 1 pound stir fry beef
  • 1 small pumpkin, peeled and diced
  • 1 teaspoon black pepper
  • 1/2 cup Korean BBQ sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 tablespoon sesame oil
  • Cooked rice, for serving
  • Green onions, for garnish

Instructions

  1. In a bowl, mix together the Korean BBQ sauce, soy sauce, brown sugar, garlic, and black pepper.
  2. Place the beef, pumpkin, and onion in the slow cooker.
  3. Pour the sauce mixture over the beef and pumpkin, and stir to coat evenly.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and the pumpkin is cooked through.
  5. Stir in the sesame oil just before serving.
  6. Serve the Korean beef and pumpkin stir-fry over cooked rice, and garnish with chopped green onions.
