Slow Cooker Korean Seitan and Asparagus

This delicious Korean-inspired recipe combines tender seitan and fresh asparagus, slow-cooked to perfection with a savory and flavorful sauce. Perfect for a hearty and satisfying meal for four.
Ingredients
- 1 pound seitan, cut into bite-sized pieces
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 tablespoon yeast
- 1 cup water
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon red pepper flakes
- Cooked rice, for serving
Instructions
- In a slow cooker, combine the seitan and asparagus.
- In a bowl, mix together the water, soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, and red pepper flakes. Pour the mixture over the seitan and asparagus in the slow cooker.
- Cover and cook on low for 4-5 hours, or until the seitan is tender and the asparagus is cooked to your liking.
- Serve the Korean seitan and asparagus over cooked rice and enjoy!
