Slow Cooker Mediterranean Cod Stew

Cod, Bell pepper, broth or stock (chicken, vegetable), slow cooker


  • 4 pieces of cod fillets
  • 2 bell peppers, sliced
  • 4 cups of broth or stock (chicken or vegetable)
  • Seasonal vegetables, such as zucchini and cherry tomatoes
  • Fresh herbs, such as parsley and thyme
  • Salt and pepper to taste
  • Olive oil
  • Lemon wedges for serving


  1. Season the cod fillets with salt and pepper, then place them in the slow cooker.
  2. Add the sliced bell peppers and seasonal vegetables around the cod fillets.
  3. Pour the broth or stock over the fish and vegetables.
  4. Drizzle some olive oil over the ingredients and add the fresh herbs.
  5. Cover the slow cooker and cook on low for 3-4 hours, or until the cod is tender and flakes easily with a fork.
  6. Once cooked, serve the Mediterranean cod stew in bowls, garnished with fresh herbs and accompanied by lemon wedges.
