Smoky BBQ Pork Roast with Rice and Lettuce

  • 1 pork roast (about 2 lbs)
  • 1 cup of rice
  • Lettuce
  • BBQ sauce
  • Salt
  • Pepper
  • Olive oil


  1. Preheat the oven to 350°F.
  2. Rub the pork roast with salt, pepper, and a drizzle of olive oil.
  3. Place the pork roast in a roasting pan and cook in the preheated oven for 1.5 to 2 hours, or until the internal temperature reaches 145°F.
  4. While the pork roast is cooking, prepare the rice according to the package instructions.
  5. Once the pork roast is cooked, remove it from the oven and let it rest for 10 minutes.
  6. Slice the pork roast and brush it with BBQ sauce.
  7. Serve the smoky BBQ pork roast with fluffy rice and a side of fresh lettuce salad.
