Sous Vide Chinese Chicken and Broccoli

This recipe combines the tenderness of sous vide chicken breast with the crispness of broccoli in a delicious Chinese-inspired dish.
Ingredients
- 4 chicken breasts
- 1 head of broccoli, cut into florets
- 1 cup of your favorite cereal
- Salt and pepper to taste
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons vegetable oil
Instructions
- Preheat the sous vide water bath to 145°F (63°C).
- Season the chicken breasts with salt and pepper, then place each breast in a separate sous vide bag.
- Cook the chicken breasts in the sous vide water bath for 1 hour.
- While the chicken is cooking, prepare the broccoli by blanching it in boiling water for 2 minutes, then immediately transferring it to an ice water bath to stop the cooking process. Drain and set aside.
- Crush the cereal into small pieces and spread it out on a plate.
- In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, garlic, and ginger.
- After the chicken has finished cooking, remove it from the sous vide bags and pat dry with paper towels.
- Dip the chicken breasts into the cereal, coating them evenly.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Sear the chicken breasts for 2-3 minutes on each side, or until the cereal coating is golden brown and crispy.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the broccoli and sauté for 2-3 minutes.
- Pour the sauce mixture over the broccoli and toss to coat.
- Slice the chicken breasts and serve with the broccoli.
