Ingredients

  • 1 (1.5-2 pound) beef roast (such as prime rib or tenderloin)
  • 4 cloves of garlic, minced
  • 1/2 cup rolled oats
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 tablespoon freshly chopped parsley

Instructions

  1. Preheat your sous vide machine to 130°F (54°C).
  2. Season the roast with salt and pepper.
  3. In a small bowl, mix together the minced garlic and olive oil.
  4. Place the roast in a large ziplock bag or a heat-safe container. Add the garlic-olive oil mixture, making sure the roast is fully coated.
  5. Seal the bag or cover the container with plastic wrap. Refrigerate for at least 2 hours or overnight.
  6. Remove the roast from the refrigerator and place it in the sous vide machine. Cook for 2-3 hours, or until the internal temperature reaches 130°F (54°C).
  7. While the roast is cooking, prepare the keto oat crust. In a small bowl, mix together the rolled oats and a pinch of salt.
  8. Remove the roast from the sous vide machine and increase the oven temperature to 400°F (200°C).
  9. Remove the roast from the bag or container and place it on a baking sheet lined with parchment paper. Sprinkle the keto oat crust evenly over the roast, pressing gently to adhere.
  10. Bake the roast for 15-20 minutes, or until the crust is golden brown and crispy.
  11. Remove the roast from the oven and let it rest for 5 minutes before slicing and serving. Garnish with freshly chopped parsley.
