Ingredients
- 2 cups cooked dirty rice
- 1 can (12 oz) Spam, diced
- 1 medium onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon Cajun seasoning (adjust to taste)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- Prepare the Ingredients: Gather all your ingredients and dice the Spam, onion, and bell pepper. Mince the garlic as well.
- Cook the Spam: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the diced Spam and cook until it’s crispy and browned, about 5-7 minutes. Remove the Spam from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add another tablespoon of vegetable oil if needed. Add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are tender, about 3-4 minutes.
- Combine Ingredients: Return the cooked Spam to the skillet and stir in the cooked dirty rice. Mix well to combine all the ingredients.
- Add Liquid and Seasoning: Pour in the chicken broth and sprinkle in the Cajun seasoning. Stir everything together and allow it to cook for another 5-7 minutes, letting the flavors meld. Adjust seasoning with salt and pepper to taste.
- Serve: Once heated through, remove from heat and serve hot. Garnish with chopped green onions if desired.
