This unique and delicious grilled cheese sandwich combines the savory flavors of spam and egg with the sweetness of tomatoes and raisins. Perfect for a quick lunch or a fun dinner, this recipe will serve 4 people.
Ingredients
- 8 slices of bread (your choice)
- 8 slices of Spam
- 4 large eggs
- 2 medium tomatoes, sliced
- 1/2 cup raisins
- 8 slices of cheese (cheddar or your preference)
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Slice the tomatoes.
- Cut the Spam into slices.
- Beat the eggs in a bowl and season with salt and pepper.
- In a skillet over medium heat, cook the Spam slices until they are browned on both sides. Remove and set aside.
- In the same skillet, scramble the eggs until fully cooked. Remove and set aside.
- Lay out the bread slices. On 4 of the slices, place a slice of cheese.
- Add a layer of Spam, then scrambled eggs, tomato slices, and raisins.
- Top with another slice of cheese and then cover with the remaining slices of bread.
- Heat a large skillet or griddle over medium heat.
- Butter the outside of each sandwich (both top and bottom slices of bread).
- Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove the sandwiches from the skillet and let them cool for a minute.
- Slice each sandwich in half and serve warm.
