Spam Fried Rice

Spam Fried Rice is a quick and easy dish that combines the savory flavors of Spam with the comforting taste of fried rice. Perfect for a weeknight dinner or a quick lunch, this recipe is sure to become a family favorite.
Ingredients
- 1 can of Spam, diced
- 4 cups of cooked rice (preferably day-old)
- 2 tablespoons of vegetable oil
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas and carrots, thawed
- 2 large eggs, beaten
- 3 tablespoons of soy sauce
- 2 teaspoons of sesame oil
- 2 green onions, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Dice the Spam into small cubes.
- Finely chop the onion and mince the garlic.
- Thaw the peas and carrots if they are frozen.
- Beat the eggs in a small bowl.
- Cook the rice if it isn’t already prepared.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the diced Spam and cook until it is crispy and golden brown, about 5-7 minutes.
- Remove the Spam from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil.
- Add the chopped onion and minced garlic, and sauté until they are fragrant and translucent, about 3-4 minutes.
- Add the thawed peas and carrots to the skillet and cook for another 2-3 minutes, until they are tender.
- Push the vegetables to one side of the skillet.
- Pour the beaten eggs into the other side and scramble them until they are fully cooked.
- Add the cooked rice to the skillet, mixing it with the vegetables and scrambled eggs.
- Return the cooked Spam to the skillet and stir everything to combine.
- Pour the soy sauce and sesame oil over the rice mixture.
- Stir well to ensure everything is evenly coated.
- Season with salt and pepper to taste.
- Remove the skillet from heat and sprinkle the chopped green onions over the top.
- Serve hot and enjoy!
