Ingredients
- 1 can of Spam, diced
- 4 cups of cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 3 large eggs, beaten
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- 2 green onions, sliced (for garnish)
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Dice the Spam, chop the onion, and mince the garlic. Make sure the rice is ready and all other ingredients are measured out.
- Cook the Spam: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced Spam and cook until it's browned and crispy, about 5-7 minutes. Remove from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 2-3 minutes. Add the peas and carrots and cook for another 2 minutes.

- Season the Rice: Drizzle the soy sauce and sesame oil over the rice mixture. Stir well to ensure everything is evenly coated. Taste and add salt and pepper as needed.
