Ingredients

  • 2 cups of cooked jasmine rice (preferably day-old)
  • 1 can of Spam (12 oz), diced
  • 2 tablespoons of vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of frozen peas and carrots, thawed
  • 3 eggs, lightly beaten
  • 3 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Dice the Spam into small cubes. Finely chop the onion and mince the garlic. Thaw the frozen peas and carrots. Slice the green onions.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced Spam and cook until it is crispy and browned, about 5-7 minutes. Remove the Spam from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the chopped onion and minced garlic. Cook until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.
  4. Add the thawed peas and carrots to the skillet. Stir-fry for 2-3 minutes until the vegetables are heated through.
  5. Push the vegetables to one side of the skillet. Pour the beaten eggs into the other side of the skillet and scramble them until they are fully cooked.
  6. Add the day-old cooked rice and the cooked Spam back into the skillet. Stir everything together.
  7. Pour the soy sauce and oyster sauce over the rice mixture. Stir well to ensure that the rice is evenly coated with the sauces. Season with salt and pepper to taste.
  8. Add the sliced green onions and give the fried rice one final stir. Cook for an additional 2-3 minutes until everything is well combined and heated through.

Serve your Spam Fried Rice hot, garnished with extra green onions if desired. This dish is a wonderful way to use up leftover rice and enjoy the savory taste of Spam. It’s sure to be a hit with family and friends!
