Spam Fried Rice is a quick, easy, and delicious meal that takes your everyday fried rice to the next level with the savory addition of Spam. Perfect for a busy weeknight or a fun weekend meal, this recipe serves 4 people.
Ingredients
- 1 can of Spam (12 oz), diced
- 4 cups of cooked jasmine rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 3 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 teaspoons sesame oil
- 3 green onions, sliced
- Salt and pepper to taste
Instructions
- Dice the Spam into small cubes.
- If using fresh rice, cook it and let it cool. Day-old rice works best for fried rice.
- Thaw the frozen peas and carrots.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced Spam and cook until it is golden and crispy, about 5-7 minutes. Remove the Spam from the skillet and set it aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil.
- Add the diced onion and cook until it becomes translucent, about 3 minutes.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the thawed peas and carrots to the skillet and cook for 2-3 minutes until they are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side.
- Scramble the eggs until they are fully cooked, then mix them with the vegetables.
- Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.
- Return the cooked Spam to the skillet and mix everything together.
- Pour the soy sauce, oyster sauce, and sesame oil over the rice mixture.
- Stir well to make sure everything is evenly coated with the sauces.
- Season with salt and pepper to taste.
- Add the sliced green onions and give the fried rice one last stir.
- Serve hot and enjoy!
