Spam Fried Rice is a delightful and quick dish that brings together the savory flavors of Spam and fresh vegetables. Perfect for a weeknight dinner or a fun lunch, this recipe is easy to make and packed with flavor.
Ingredients
- 2 cups cooked jasmine rice (preferably day-old)
- 1 can (12 oz) Spam, diced
- 2 tablespoons vegetable oil
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 cup mixed frozen vegetables (peas, carrots, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 large eggs, beaten
- Salt and pepper to taste
- Optional: Sriracha sauce for serving
Instructions
- Prepare the Rice: If using freshly cooked rice, spread it on a baking sheet to cool and dry out slightly. Day-old rice works best as it’s less sticky.
- Cook the Spam: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced Spam and cook until it’s golden and crispy, about 5-7 minutes. Remove the Spam from the skillet and set it aside.
- Sauté Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and cook for about 30 seconds until fragrant. Then, add the mixed frozen vegetables and sauté for 3-4 minutes until heated through.
- Add Rice: Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.
- Incorporate Spam: Return the cooked Spam to the skillet. Pour in the soy sauce and sesame oil, stirring everything together. Cook for another 2-3 minutes until everything is heated through.
- Scramble Eggs: Push the rice mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Once done, mix the eggs into the rice.
- Season: Season the fried rice with salt and pepper to taste. Add the chopped green onions and stir to combine.
- Serve: Divide the Spam fried rice among four plates. Drizzle with Sriracha sauce if desired and enjoy!
