Ingredients

  • 1 can of Spam, sliced into 1-inch cubes
  • 1 pound of Brussels sprouts, trimmed and halved
  • 1 cup of cooked beans (such as black beans or kidney beans)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper
  • 1/4 cup of gluten-free chicken broth
  • 1/4 cup of water

Instructions

  1. In the crockpot, combine the sliced Spam, Brussels sprouts, chopped onion, garlic, smoked paprika, salt, black pepper, and cayenne pepper.
  2. In a small bowl, whisk together the gluten-free chicken broth and water. Pour the mixture over the ingredients in the crockpot.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, stir in the cooked beans.
  5. Taste and adjust seasoning as needed.
  6. Serve hot, garnished with chopped fresh cilantro or scallions, if desired.
