Spam & Tomato Savory Muffins

Ingredients
- 1 can of Spam, diced
- 2 ripe tomatoes, chopped
- 2 cups of all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup milk
- 1/4 cup olive oil
- 2 large eggs
- Salt and pepper to taste
- Fresh herbs (optional, such as parsley or chives)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners or grease it lightly with olive oil.
- In a food processor, pulse the diced Spam and chopped tomatoes until they are finely mixed but still have some texture.
- In a large bowl, combine the flour, baking powder, salt, and pepper. Mix well.
- In another bowl, whisk together the milk, olive oil, and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Gently fold the Spam and tomato mixture into the batter. If using fresh herbs, fold them in at this stage as well.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
