What Started it all:
Cod, Pea, nuts (almonds, walnuts), rice cooker

  • 4 pieces of cod fillet
  • 2 cups of peas
  • Handful of almonds
  • Handful of walnuts
  • 2 cups of basmati rice
  • 4 cups of water
  • Salt
  • Black pepper
  • Olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of paprika
  • 1 teaspoon of garam masala
  • Fresh coriander for garnish

  1. Start by heating a pan over medium heat and toasting the almonds and walnuts until they're beautifully golden. Then set them aside.
  2. Next, in a rice cooker, add the basmati rice, water, peas, a pinch of salt, and the toasted nuts. Put the lid on and let it cook until the rice is fluffy and the peas are tender.
  3. While the rice is cooking, season the cod fillets with salt, black pepper, cumin, turmeric, and paprika.
  4. In a large pan, heat some olive oil over medium-high heat. Add the seasoned cod fillets and cook for 4-5 minutes on each side until they're cooked through and have a lovely golden crust.
  5. Once the rice is ready, fluff it up with a fork and sprinkle in the garam masala, gently mixing it through.
  6. Serve the spiced cod on a bed of the nutty pea rice, garnish with fresh coriander, and prepare to be amazed by the explosion of flavors!
