Ingredients

  • 4 salmon fillets
  • 4 cups of fresh spinach
  • 1/4 cup of soy sauce
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of turmeric
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the soy sauce, ground cumin, ground coriander, turmeric, salt, and pepper.
  3. Place the salmon fillets in a baking dish and pour the soy sauce mixture over them, ensuring they are evenly coated. Let them marinate for 15 minutes.
  4. While the salmon is marinating, heat the olive oil in a large skillet over medium heat.
  5. Add the fresh spinach to the skillet and sauté until wilted, about 3-4 minutes. Season with a pinch of salt and pepper.
  6. Transfer the marinated salmon fillets to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve the spiced Indian salmon alongside the sautéed spinach.
