Ingredients

  • 1 lb lamb, cut into cubes
  • 2 medium turnips, peeled and diced
  • 1/2 teaspoon baking soda
  • Assorted spices (cumin, coriander, turmeric, garam masala, paprika, salt, and pepper)
  • Olive oil
  • Fresh cilantro, for garnish

Instructions

  1. 1. In a bowl, mix the lamb cubes with a pinch of salt, pepper, and the baking soda. Let it sit for 15 minutes to tenderize.
  2. 2. Heat a drizzle of olive oil in a large pot over medium heat.
  3. 3. Add the lamb cubes to the pot and cook until browned on all sides. Remove the lamb from the pot and set it aside.
  4. 4. In the same pot, add a bit more olive oil if needed, then toss in the diced turnips. Cook for a few minutes until they start to soften.
  5. 5. Sprinkle in the cumin, coriander, turmeric, garam masala, and paprika. Stir well to coat the turnips with the spices.
  6. 6. Return the lamb to the pot and pour in enough water to cover the ingredients. Bring the stew to a gentle simmer.
  7. 7. Let the stew simmer for about 45 minutes, or until the lamb is tender and the turnips are cooked through.
  8. 8. Taste and adjust the seasoning if necessary.
  9. 9. Serve the spiced lamb and turnip stew hot, garnished with fresh cilantro.
