Spiced Lentil and Vegetable Patties

Ingredients
- 1 cup red lentils, rinsed and drained
- 1 medium carrot, grated
- 1 small zucchini, grated
- 1/2 cup finely chopped spinach
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 1/4 cup water (as needed)
- Fresh coriander leaves, chopped (for garnish)
Instructions
- Cook the Lentils: In a pot, combine the rinsed lentils with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, or until lentils are soft. Drain any excess water and let cool slightly.
- Prepare the Vegetables: In a large bowl, combine the grated carrot, grated zucchini, chopped spinach, chopped onion, and minced garlic.
- Mix Ingredients: Add the cooked lentils to the vegetable mixture. Stir in the cumin, coriander, turmeric, black pepper, and salt. Mix well to combine. If the mixture is too thick, add water gradually until you achieve a moldable consistency.
- Shape Patties: Take small portions of the mixture and shape them into patties, about 1/2 inch thick.
- Cook the Patties: In a non-stick skillet over medium heat, place the patties. Cook for 4-5 minutes on each side until lightly browned and firm. You may cover the skillet to help cook them through.
- Serve: Remove patties from the skillet and let them cool slightly. Garnish with fresh coriander leaves before serving.
