Spiced Quinoa with Tomato

  1. Grab the pressure cooker and place it on the stove.
  2. Pour in the quinoa and add water in a 1:2 ratio. Bring it to a boil.
  3. While the quinoa is cooking, chop the tomatoes into small pieces.
  4. In a separate bowl, mix cumin, paprika, and chili powder.
  5. Once the quinoa is ready, add the chopped tomatoes and the spice mix. Stir well.
  6. Cover the pressure cooker and let it cook for a few more minutes until the tomatoes are soft and the flavors are absorbed.
