Spiced Salmon with Sautéed Kale

Ingredients
- 4 salmon fillets
- 1 large bunch of kale, roughly chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lemon wedges (optional, for serving)
Instructions
- In a small bowl, combine the cumin, paprika, chili powder, salt, and pepper.
- Rub the spice mixture evenly over the salmon fillets.
- Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat.
- Place the salmon fillets, skin side down, in the pan and cook for about 4-5 minutes.
- Carefully flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove the salmon from the pan and set aside.
- In the same pan, add the remaining tablespoon of olive oil.
- Add the chopped kale and sauté for about 5-7 minutes, or until wilted and tender.
- Season with salt and pepper to taste.
- Divide the sautéed kale among four plates.
- Place a salmon fillet on top of each bed of kale.
- Serve with lemon wedges on the side, if desired.
