Spiced Sardine and Asparagus Stir-Fry with Oats

Sardines, Asparagus, oats, wok
A delightful and nutritious Indian-inspired dish that combines the rich flavors of sardines with the freshness of asparagus, all brought together in a wholesome stir-fry with oats.
Ingredients
- 8 sardines, cleaned and gutted
- 1 bunch of asparagus, trimmed and cut into bite-sized pieces
- 1 cup oats
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, finely chopped
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat the wok over medium heat and dry roast the oats until they turn golden brown. Set aside.
- In the same wok, heat the vegetable oil and add the cumin seeds. Once they start spluttering, add the chopped onions and green chilies. Saute until the onions turn golden brown.
- Add the chopped tomatoes and cook until they soften and the oil starts to separate.
- Stir in the turmeric, coriander, and cumin powders, and season with salt.
- Add the sardines and cook for 2-3 minutes on each side until they are cooked through.
- Gently fold in the asparagus and cook for another 5 minutes, allowing the flavors to meld together.
- Finally, sprinkle the roasted oats over the stir-fry and gently mix to combine.
- Garnish with fresh coriander leaves and serve hot.
