Spiced Sardine and Asparagus Stir-Fry with Oats

A delightful and nutritious Indian-inspired dish that combines the rich flavors of sardines with the freshness of asparagus, all brought together in a wholesome stir-fry with oats.

Ingredients

  • 8 sardines, cleaned and gutted
  • 1 bunch of asparagus, trimmed and cut into bite-sized pieces
  • 1 cup oats
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, finely chopped
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the wok over medium heat and dry roast the oats until they turn golden brown. Set aside.
  2. In the same wok, heat the vegetable oil and add the cumin seeds. Once they start spluttering, add the chopped onions and green chilies. Saute until the onions turn golden brown.
  3. Add the chopped tomatoes and cook until they soften and the oil starts to separate.
  4. Stir in the turmeric, coriander, and cumin powders, and season with salt.
  5. Add the sardines and cook for 2-3 minutes on each side until they are cooked through.
  6. Gently fold in the asparagus and cook for another 5 minutes, allowing the flavors to meld together.
  7. Finally, sprinkle the roasted oats over the stir-fry and gently mix to combine.
  8. Garnish with fresh coriander leaves and serve hot.
