Spicy Air-Fried Indian Cod with Sweet Potato and Potatoes

Ingredients

  • 4 pieces of cod fillet
  • 2 sweet potatoes, peeled and cut into wedges
  • 4 medium-sized potatoes, peeled and cut into wedges
  • Cooking spray or oil for the air fryer

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Season the cod fillets with salt, pepper, and a pinch of turmeric for color and flavor.
  3. Place the sweet potato and potato wedges in a large bowl and drizzle with a little oil. Season with salt, pepper, and a generous amount of garam masala for that authentic Indian flavor.
  4. Place the seasoned cod fillets in the air fryer basket, making sure they are not overcrowded, and cook for 10-12 minutes until golden and cooked through.
  5. While the cod is cooking, spray or brush the air fryer basket with oil and place the seasoned sweet potato and potato wedges in the basket. Cook for 20-25 minutes, shaking halfway through, until crispy and tender.
  6. Serve the spicy air-fried cod with the crispy sweet potato and potato wedges, and garnish with fresh coriander leaves and a squeeze of lime for a burst of freshness.
